Aminopeptidase is a zinc-dependent enzyme produced by glands of the small intestine and assists in the enzymatic digestion of proteins therein. Additional digestive enzymes produced by these glands include dipeptidases, maltase, sucrase, lactase, and enterokinase.[1]
